The technical bravura and culinary acumen needed to create a restaurant like Suda’s has never been accumulated overnight.

While spending her childhood in Lebanon, Rina would daydream of sharing her culture’s cuisine with the world by opening a restaurant back in Chicago. She always knew she would name her restaurant “Suda’s”, her mothers nickname. Fast forward to her adolescence in Chicago where Rina spent most of her time at Costa D’oro, a fine dining restaurant that was run by her father and his brothers. Here Rina learned how to cook truly exceptional food; that is when she wasn’t sneaking biscotti from the kitchen staff. Rina was proud to learn the right cuts of vegetables for different stews, what spices paired with the right proteins, which rice to wash and with which temperature of the water, along with so much more.

If you weren’t sold yet, Rina also spent the bulk of the pandemic in Okoboji, Iowa helping her aunt Juliana open three successful restaurants. Today, Rina’s efforts culminate in our beautiful restaurant, Suda’s. Lebanese cuisine is a Mediterranean cuisine with a rich and diverse culinary heritage. It is characterized by its fresh ingredients, bold flavors, and colorful presentation. Lebanese cuisine has been influenced by a variety of cultures, including Ottoman, French, and Arab cuisines, resulting in a fusion of flavors that is both unique and delicious.

Mezze, a selection of small dishes, is a popular way of eating in Lebanon. It includes a variety of vegetarian and meat-based dishes such as baba ghanoush, stuffed grape leaves, kibbeh (a mixture of minced meat and bulgur wheat), and falafel (deep-fried balls of ground chickpeas or fava beans).

Lebanese cuisine also features a range of grilled meats, such as shish taouk (marinated chicken skewers), kafta (spiced ground meat skewers), and shawarma (layers of marinated meat cooked on a spit and shaved off to serve).

Our founder Rina Timatyos has been developing a deep understanding and love of her native Lebanese cuisine for as long as she can remember. Rina was only four when her mother, Souad, took her from Chicago to Lebanon to meet her family. Rina would spend her mornings in Lebanon’s Beqaa valley working with her family to put food on the table. Some of Rina’s first memories were waddling back and forth from the chicken coop to deliver her grandma's eggs and helping her uncle hunt quails.
